In the next installment in our #GopherCooks workshop series, we will be preparing a cauliflower steak, garnished with coriander dressing, on a bed of cereals. Fellow PhD student Fabio Aguilar will guide us on our way to producing this easy yet delicious dish. We will be preparing the dish together, at the same time; Fabio will show us how, and we will follow suit. If you have any questions, you can ask them directly. After having prepared the food, we will have dinner together as well.
List of ingredients (for 2 portions, depending on the size of the vegetable):
Steak
1 cauliflower
2 eggs
1 spoon of white flour
1 tea spoon of sugar
Salt & pepper
20 grams of cheese (recommended a strong cheese, although goat cheese is also great)
Dressing (can be stored for up to a week)
75 grams of fresh coriander (if you’re not a fan, use parsley instead)
6 garlic cloves
2 red onions (although white onions also work)
1 orange, or ¼ cup of fresh orange juice
1-2 tea spoons of dry chili flakes (amount depends on your own preference)
Oil (normal oil works fine)
35 ml. (¼ cup) of wine vinegar
Salt & pepper
Cereals
½ cup of cereals
Brown rice with quinoa
1 small onion, or ½ of a big onion
1 garlic clove
Salt & pepper
Utensils
Oven (confection works nicely, toaster as well) or frying pan (which will require some changes, but we will make it work)
